Gastrouzhin "Spring. The Awakening"
Tired of the winter monochrome, nature takes its first breath. Earth, water and air begin their dialogue, giving birth to the first colors and aromas. We invite you to a gastronomic conversation, where the heroes will be the menu from the brand chef of the Elements Hotels chain Ivan Honin, and the fine wines will be presented by the ambassador of the Simple company, sommelier Nikita Ilyin.
This dinner is our collective research.
What is "awakening" in the language of tastes? These are the sourness of the first greenery, the smokiness of the retreating cold, the tenderness of young shoots and the slow melting in the sweet finale.
We have compiled the menu as a poem in six stanzas. Each pair of "dish-wine" is a finished thought, an emotion, a lived moment.
The evening program includes 6 core courses:
1. Rhubarb granite with radish and black caviar / Aylal Treyshadura dry white wine
2. Spring remake salad with strachatella/ Aligote, Shumrinka
3. Fried camembert with cedar cones and spicy honey / Flamingo, Nikolayev and Sons
4. Smoked sterlet souffle with horseradish cream and green butter / Gran Feudo Rosado, Bodegas Civite
5. Ossobuco-style turkey with corn risotto / El Pillo Roble, Felix Solis
6. Almond honey cake with ryazhenka cream and salted caramel from pine nuts / Pari, Shumrinka
