Gastronomic Dinner "Wild Northern Terroir: Chef's Version"

Did you know that FOUR Restaurant is celebrating its 11th birthday this year?
To mark the occasion, we invite you to a unique gastronomic evening hosted by Ivan Khonin, Brand Chef of the Elements Hotels chain.
The idea for this gastronomic project was born not in the restaurant kitchen, but in the wild forests, fields, and lakes of our northern region. "Wild Northern Terroir: Chef's Version" is a special dinner, the dishes of which are created from unique ingredients, personally collected, foraged, and prepared by the chef.
You'll taste dishes not found on our restaurant menu. Mushrooms and berries, game with a special history, bread and honey from our own production—every ingredient is unique and inimitable, as is their combination this evening.
Dinner as a biography: each course is a personal story of the brand chef, embodied in taste, which no one else will ever tell.
The entire evening will unfold in a lively dialogue. Brand Chef Ivan Khonin will personally introduce each course and reveal the secrets of ingredients and cooking techniques, while host Grigory Malakhov will offer wine pairings from Simple's partners.
The evening's program includes 5 main courses and 3 secret ones:
1. Secret mini-appetizer / Nuvole Brut (sparkling dry white brut, Russia)
2. Black milk mushroom/watermelon/stracciatella / Paddle Creek Marlborough Sauvignon Blanc (dry white, New Zealand)
3. Wood grouse croquette/cedar cream/volnushki/port / Loco Cimbali Pinot Meunier (dry red, Russia)
4. Secret course from the brand chef
5. River roach/root vegetables/tarragon / Mezyb Chardonnay Viognier (dry white, Russia)
6. Veal brisket/tagliatelle cream/pipe rigate/smoky chips / Luigi Bosca Malbec (dry red, Argentina)
7. Secret cocktail from Bartender
8. Mascarpone Cream/Crispy Cake/Kruplyanika/KVV Cape Toni Port (South Africa)
